Im trying to get a twin-head dragon talisman, which of the 3 parts should I be breaking with zahhak to get it?

 

I'm not sure myself either. It would be safe to just break all three.

That ring doesn't make you immune to the ailments, rather it removes your ability to inflict them. If you just want to remove tumble since a lot of bosses get triggered by it use york necklace it even gives you stability.

 

It should say in the boss info menu.

 

I dont know where it states which specific part I need to break. It just states below the special gear icon that it comes from breaking a specific part.

 

Break head get horn, break tail get tail, break whatever look like a ring it’s give ring.......

Yes unavailable does mean YOU will not be able to inflict it. Just because it is expensive does not mean it is good it just means it has some demand and very less supply.
The xta corroded knight captain used to be sold for 7m because no supply and people thought it is actually useful when in fact it is a very bad xta.
