    How would the negative 50% stability affect me? I'm wondering if this one is worth using for the 25 crit

    Stability won't go down below 0% and stability simply means your damage can range from your stability% to 100%.

    It's if your purpose is doing damage, because it will be "unstable"
    It's the %value on right side of you weapon's atk plus stability gain through stats, skills and subweapon.
